Gastronomy Laboratories

Universidad de La Sabana has different practice scenarios that operate as classrooms of knowledge about the basic principles of cooking. The best equipment for the food industry is housed in the L building: pastry machines, cooking stations, and ultra freezers, among others, which make up the kitchen workshops.

With a capacity for 15 students, the workshops have state-of-the-art equipment and a distinctive design that facilitates the teacher-student interaction.

Each cooking workshop is divided into two sections, which provides a better learning space, since the teacher can guide culinary practices in a personalized way. Beginning in the second semester, students begin work in these spaces according to the cooking line that corresponds to their curriculum.

Gas Workshops

Kitchens equipped with gas stoves and ovens that allow direct contact with food preparation. In this space, Basic and Advanced Cuisine students put culinary knowledge into practice in a real scenario.

Bakery and Pastry Workshop

It is a classroom with a capacity for 15 students, equipped with marble countertops, suitable for handling pastries, an ice cream machine, and a convection oven, among other high-end equipment.

Induction workshop

This is a space that works without fire. Instead, to start the cooking, they use electromagnetic fields with batteries (pans, pots) made from a specific material to develop this practice. The purpose of the classroom is that students, who are moving ahead of the Intermediate cooking line, learn to identify different ways of cooking using a technology that prevents fire incidents.

Food Lab

The Food Lab of Universidad de La Sabana  is a space that integrates food science with culinary art through the characteristic equipment of physicochemistry, physical properties, and sensory analysis of food.

This laboratory space has the facilities of a kitchen with support equipment for the study of the transformations that happen to food when they are subjected to different culinary techniques. 

As differentiating elements of our Food Lab, we have highly valued equipment for food science and culinary arts such as: ultrasound baths, analytical, semi-analytical scales and with memory for nutritional assessment, digital colorimeter, digital potentiometer, stirring heating plates, induction stoves, stereoscope, optical microscope, volumetric and gravimetric material, calibrators, refractometers, drying stoves, thermomix, gastrovac, ohmic cooking equipment and sensory analysis booths.

Its design and distribution makes it possible to perform collaborative work between the culinary arts and food science. It has a capacity for 16 students and it develops research projects funded by the University and Colciencias.

School Restaurant

The School Restaurantis a space dedicated to the exaltation of Colombian cuisine and product, from the presentation of haute cuisine dishes in a sophisticated environment. There, Gastronomy andAdministration & Servicestudents have an approach to the real gastronomic world, strengthening their skills as a service for others. For 5 years the School Restauranthas developed different menus based on the traditional flavors of the different regions of the country.

Bloomberg Laboratory

The "Bloomberg" Laboratory consists of 24 terminals that allow you to track financial, economic and corporate information in real time from all continents.

Universidad de La Sabana, a pioneer in the country by owning a laboratory of these characteristics, allows its students and professors to access this valuable system that constitutes an excellent complement both for teaching and for research projects. In particular, having this platform brings students closer to the context in which the investment operations of financial sector entities, such as banks and stockbrokers, take place daily.

BVC Point

The BVC Point of Universidad de La Sabana is a space of the International School of Economic and Administrative Sciences developed in agreement with the Colombian Stock Exchange, where the university community and the impact zone have the opportunity to learn about national financial markets and the operation of the stock market through assets such as stocks, bonds, derivatives, and currencies.

There, you have access to several platforms provided by the Colombian Stock Exchange that allow you to follow minute-by-minute quotes and offers to buy and sell stocks, currencies, fixed income securities and derivatives that are traded in the Colombian financial market.

The aim of this space is to spread the financial culture in the Colombian population so that it is more related to the dynamics of the markets, learning about stock market movements that can generate profitability, through real-time operations.

Refinitiv-Reuters Laboratory

Likewise, we have the “Refinitiv-Reuters” Laboratory, provided with three licenses for the consultation of real-time information on local and international financial markets, and also about the financial statements and other relevant information of corporations listed globally.

This laboratory is also used intensively by students and professors who develop research topics, thanks to the possibility of accessing economic and financial databases.

The Finance Laboratories of Universidad de La Sabana constitute the space in which students, through the Finance syllabus courses, face problems and situations of the economic environment in real time, thus enriching the practical relevance in their academic work.

Financial Laboratories

Universidad de La Sabanahas four Finance Laboratories on the first floor of the “Ad Portas” building: The BVC (Colombian Stock Exchange) Point, in association with the Colombian Stock Exchange; the “Mercantile Exchange Chamber” as a result of our exclusive agreement with the Colombian Mercantile Exchange; the "Bloomberg" Laboratory equipped with computers of this recognized financial information system, and the "Refinitiv-Reuters" Laboratory that has equipment to consult financial information through this platform.

NeuroSmart Lab

The objective of the NeuroSmart Lab is to conduct neuroscience research applied to marketing, in order to understand how the consumer behaves and works. In turn, it seeks, through research, to create more assertive products and images that steal the attention of the consumer, all of this by elucidating the perceptual and sensory processes of the human being, understanding them thoroughly to apply them to the business world. It is located on the second floor of the L Building.
